Berlin pork schnitzel

Potato cucumber salad & Bernaisemayo

… can you serve schnitzel with sauce? Yes! You don’t have to dip it into the sauce, after all. I love eating my schnitzel with a sauce, and for our “Berliner Schnitzel” – made from tender pork shoulder, finely breaded and fried in clarified butter – we now serve an individual creation: “Béarnaise mayonnaise”. It is a mayonnaise made with the ingredients of a herby Béarnaise sauce, with subtle notes of anise. Alongside it comes a potato and cucumber salad with playful acidity from rice vinegar and a hint of chilli paste for a little tingle on the palate.

...And it all began with granny gerda

Tim’s culinary story begins with Grandma Gerda. He says himself: “My greatest wish would be to be able to cook for her and my grandfather here on the TV tower”. Watch the video to find out what special story connects the two of them.
